Japan Food Experience Fall 2011
I had been highly anticipating a visit this time of year due to the seasonal abundance of fish and produce. Fall season is known for hikari mono or silver skin fish like saba, sanma and aji. Even after 13 years as a sushi chef I learned the difference between aburi saba and shime saba. I now know that my weird perception of Japan was totally skewed and it resembels the Fast and the Furious Tokyo Drift or Black Rain as opposed to The Last Samurai.
